Vineyard notes
Since 2005 the vineyard has been converted to organic agriculture. The vines are on a plateau or slopes with clay limestone soil. The density of plantation is 5000 vines per hectare which favours vigour canopy growth and shading which gives more green flavours to the sauvignon blanc.
Winemaking notes
The grapes are mechanically harvested during the night to avoid oxidation, then chilled and pressed up to 0 8 bar. No sulphur was added. The juice was then naturally clarified and started to ferment. When only 16 g/l of sugar was left, we chilled the wine to 5 then earth filtered to block the fermentation. A few weeks later we reseeded the wine with yeast and bottled it. The fermentation starts again after 3-4 weeks and finishes all the sugar. The wine remains with its lees.
Food tasting
Pale yellow green, pungent herbaceous exotic fruit, yellow fruit, with a touch of green apple, nice bubbles well balanced clean and long flavour. Perfect as an aperitif, all raw fish and hors d’oeuvres.
